How hard candy production works

Ingredient handling
Shick Esteve Bag dump stations provide a safe, dust-free way to manually add dry ingredients.
Liquid ingredients, such as glucose, are temporarily stored in our Shick Esteve Tank systems, or Tote systems, and then delivered through pumps.

Cooking
The cooking stage transforms the slurry into a precise sugar syrup with the final moisture content and temperature for hard candy production. This step ensures consistency and quality across both standard and sugar-free recipes.
For automated high output lines and specialty recipes, the Baker Perkins Microfilm™ cooker offers vacuum thin-film technology for rapid, gentle cooking of heat-sensitive ingredients and syrups with inclusions.
All systems are designed for hygienic operation, consistent quality, and seamless integration with downstream wrapping equipment.

Additions system
Colors, flavors, acid and additions such as vitamin C are mixed into the syrup stream as it is transferred to the depositor in heated pipework. The additions are stored in individual tanks (stirred if necessary) and metered into a static or dynamic inline mixer by high-accuracy peristaltic pumps.

Depositing
Hard candies are formed using by the Baker Perkins ServoForm™ lollipop depositor. The depositor accurately fills metal moulds with sugar syrup mass from the cooker, producing perfectly shaped candies with smooth surfaces and consistent size and weight.
The system can produce solid, striped, layered, or filled hard candy designs. The depositor includes an integrated cooling tunnel with mould ejection system and transfer conveyor for hygienic, fully automatic, high-speed production.
