Scalable solutions for hard biscuit production line
Hard sweet biscuits including popular varieties such as “rich tea”, “Marie”, and “morning coffee” biscuits are made globally using diverse dough types and processes. Coperion’s advanced equipment supports both sheeted and laminated biscuit manufacturing to meet your specific production needs.
Our hard sweet biscuit processing technologies ensure precise control over key production parameters, including dough thickness, relaxation, embossing, and cutting. Whether producing traditional biscuit textures or developing innovative products, our integrated lines deliver consistent quality and smooth scalability from pilot test runs to full-scale manufacturing.
For advanced sandwich applications, our biscuit and cookie lines can be seamlessly integrated with the Peters high-speed sandwiching machines, enabling the precise application of a wide range of intermediate fillings.

How hard biscuit production works



Mixing & dough feed
The process begins with Baker Perkins Horizontal high-speed mixer, designed for efficient, uniform mixing of both hard and soft doughs. Its shaftless blades accelerate dough development while preserving inclusions. Batch sizes range from 85 to 385 kg, supporting outputs of 2,380 to 5,390 kg/hr.
Alternatively, for specialty or inclusion-heavy doughs, Shaffer Single Sigma Arm mixer is also available. These mixers provide gentle yet thorough mixing with precise ingredient distribution. Batch sizes range from 600–2,450 kg , depending on the model.
Once mixed, dough is transferred through Baker Perkins Dough feed systems tailored to production needs. These hygienic systems handle both bulk and metered feeds, with options for Baker Perkins Dough resting and conditioning to ensure consistent quality.

Sheet forming
Dough sheets are formed using the Baker Perkins TruClean™ three roll sheeter, which compresses and conditions dough while recycling trim efficiently.
For laminated biscuits, the Baker Perkins TruClean™ laminator creates controlled multi-layer sheets with excellent weight distribution and alignment.
The Baker Perkins TruClean™ gauge rolls then precisely reduce the dough sheet to the desired thickness, ensuring uniformity and minimizing waste.

Cutting & dough recovery
Dough sheets for hard biscuits are precisely gauged and cut using the Baker Perkins TruClean™ rotary cutter, delivering consistent shapes with high efficiency. The system features quick die roll changes and an easy-to-use HMI for smooth operation.
Any excess dough is efficiently Shick Esteve recovered and recycled back into the process, minimizing waste and ensuring consistent dough usage before baking.


Baking & handling
Baking is performed using the Baker Perkins TruBake™ range of ovens, each tailored for specific biscuit types and baking requirements.
The Baker Perkins DGF oven is ideal for hard biscuits needing precise control of color, texture, and moisture.
The Baker Perkins Hybrid oven offers flexibility for a variety of biscuit specifications, while the Baker Perkins HiCirc direct convection oven ensures even baking for delicate or thinner products.
After baking, the Baker Perkins biscuit handling systems efficiently transport biscuits from oven outfeed to wrapping machines. These modular systems have cooling conveyors that can be single or double tier based on the factory layout. They also include servo-controlled channelling boards that guide biscuits into neat lanes. Stacking units prepare biscuits in an upright position for packaging or further processing.

Option – Sandwiching
For biscuit manufacturers looking to expand into sandwich products, our Peerless sandwiching technology offers a robust solution.
Available in multiple configurations, the system can produce from several hundred up to 4,800 sandwiches per minute. It accommodates a variety of biscuit shapes and sizes, and supports a wide range of fillings, including cream, peanut butter, cheese, and jelly.

Option – flour reclaim system for biscuits
The Shick Esteve Laramore flour reclaim system provides hygienic, efficient recovery of dusting flour on biscuit lines. It reduces labor, recovers up to 96% of flour, removes contaminants, and improves air quality, supporting consistent, safe, and sustainable biscuit production.

Option – Biscuit rework
The biscuit rework process uses a Kemutec KEK Cone Mill to recycle broken or rejected biscuits by milling them into uniform crumbs for reuse in production.
