TruClean™ wirecut mini from Baker Perkins is a small soft dough forming machine designed for precise small-batch production, ideal for R&D labs, pilot baking, and artisan bakeries. It offers excellent weight control and uniform dough pressure for consistent cookies and bars up to 76.2mm (3”) in diameter, for up to 60 cuts per minute with speeds from 100 to 1,000 pieces per minute. Easy to clean and maintain, it supports fast changeovers and meets current sanitation standards.

TruClean™ wirecut mini is built for bakeries, R&D labs, and test kitchens that need to replicate industrial wirecut performance in smaller batches. A built-in two-axis servo system allows infinite variability in the cutting and return paths, enabling precise portioning even at high speeds or with difficult dough types. This advanced system, combined with best-in-class weight control and uniform dough pressure, ensures consistent product weights across the entire machine width.
