The industrial SPI spiral mixer from VMI are engineered for high-throughput dough production across a wide range of applications from artisan breads and pastries to rich, low-hydration doughs like tart or frozen dough. Available in multiple configurations (AV, AVI, and DAVI), these models combine robust 24/7 performance with ergonomic, easy-to-use features.

The removable bowl design supports greater handling flexibility, faster changeovers, and improved sanitation, making it ideal for bakeries, pastry shops, and catering operations that demand both capacity and efficiency.

Each mixer features powerful motors, an efficient pinion bowl drive system, and is available with intuitive Touch HMI or manual Access control. Optional dual-tool versions (DAVI) provide enhanced kneading performance for specialty doughs.

All models feature full stainless steel construction with smooth surfaces and minimal retention zones. The removable bowl includes ergonomic handles for easier cleaning and bowl transfers, while the optional PETG lid minimizes flour dust and enables ingredient additions during mixing.

Operator-friendly controls and flexible layout
Whether with manual controls on the AV, the Digy touch panel on the AVI, or the advanced programmable touchscreen on the DAVI, bakeries can choose the interface that fits their needs. Optional features like mobile bowl lifters, noise-reduction design, and adaptable control panel placement support ergonomic and space-efficient plant integration.
